Ghee cow, also known simply as "cow ghee," is a traditional clarified butter that holds a special place in many cultures, particularly in South Asia and parts of the Middle East. It is made by simmering butter from cow's milk over low heat until the water content evaporates and the milk solids separate, leaving behind a golden, aromatic, and flavorful fat.

The process of making ghee from cow's milk begins with sourcing high-quality butter, ideally churned from the milk of grass-fed cows. The butter is then melted in a heavy-bottomed pan over low heat, allowing it to slowly simmer and separate into three distinct layers: clarified butter, milk solids, and water.

As the butter simmers, the water evaporates, and the milk solids gradually sink to the bottom of the pan and begin to brown, imparting a rich, nutty flavor to the ghee. The clarified butter, which floats on top, is carefully skimmed off and strained to remove any remaining milk solids, resulting in a clear, golden liquid with a rich, buttery aroma.

Ghee cow is prized for its numerous health benefits and culinary versatility. It has a high smoke point, making it ideal for frying, sautéing, and deep-frying, as it does not burn easily and imparts a deliciously rich flavor to dishes. It is also shelf-stable at room temperature, which means it can be stored for extended periods without refrigeration.
